If you have not tried tofu, this is a great way to try it for the first time! This recipe is super quick and easy, but packed with nutrients and protein! A bounty of vegetables adds bulk and makes this meal appear to have more calories than it does. Found in the Spring 2008 issue of Clean Eating Magazine.
Olive Oil Cooking Spray
1 pkg of extra-firm fortified tofu, cut into thin slices
2 celery stalks, chopped
1 small onion, chopped
1 red bell pepper, cut into strips
1/2 bunch asparagus, ends trimmed and cut in half
2 cups brocoli florets
1 cup green beans, chopped into quarters
1 ripe mango, peeled and cut into strips
3 tbsp gluten-free teriyaki sauce
1 tbsp balsamic vinegar
1/2 tsp red pepper flakes
pinch ground black pepper
Spritz a large pot with coooking spray and heat over medium heat. Add tofu and saute for 5 minutes. Remove tofu to a plate. Add vegetables, mango, teriyaki sauce, balsamic vinegar, pepper flakes and black pepper to pot. Saute for 5 minutes, then add tofu back to pot and cook for an additional 3 to 5 minutes.
