Crab Wonton Bites

One of my favorite cooks is my friend Melanie Baker! I always find out what she has brought to a party or potluck because I know it will be delicious. 🙂  At a recent party, she brought these crab wonton bites.  They were SO yummy!  I asked her to please share the recipe on my blog.  She doesn’t really use a recipe, but put this together so I could share it with all of you.  Not only do they taste great, but they are healthy and ADORABLE!  Great party food.

Mix together:

1/2 lb. lump crabmeat, chopped

1/4 c. celery

1/2 c. mango

1/4 c. scallion

2 T. cilantro

Put in fridge to keep cold until ready to use.

Brush wonton wrappers (one pkg) with oil and sprinkle with salt.  Put in mini-muffin tin.  Bake at 350 degrees for 8 mins.

Wisk together:

2 T. lime juice

1/4 tsp. salt & pepper

2 T. canola oil

1/2 tsp. crushed red pepper

Pour over crab mixture and gently mix.  Put spoonfuls in wonton cups.  Serve immediately.
