Spicy Bean Burgers
Planning on some grilling for your weekend celebrations? A dash of soy sauce and a flash on the grill gives these delicious burgers their hearty flavor. Kidney beans and hazelnuts provide a healthy and tasty source of protein. Serve these burgers up with fresh basil, lettuce, garden tomatoes, avocado, red onion, or any of your favorite toppings. Make plenty to share with friends and family!
1 packed cup red kidney beans (cooked or canned), drained
1 shallot, finely chopped
½ cup hazelnuts, finely chopped
1 tsp. ginger, finely chopped
1 pinch cayenne pepper
2 tsp. soy sauce
2 Tbs. bread crumbs
2 Tbs. flour
salt & pepper (to taste)
oil for grilling or frying
Mash or puree the kidney beans (with a little water, if necessary) to a coarse paste.
Add shallot, hazelnuts, ginger, cayenne pepper, soy sauce, bread crumbs, flour, salt and pepper; mix well.
Season and shape into 4 flat burgers; brush with oil and grill over hot embers. Alternately, fry the burgers in hot oil.
Serve on a toasted bun with all the usual burger trimmings. Makes 4 burgers.
