Taco Soup

This is a recipe that was shared with me by a client and friend.  It’s a favorite of theirs from Weight Watchers.  I recommend using organic ingredients.

1 pound ground turkey or lean hamburger meat

1 package of taco seasoning

1 package of dry Hidden Valley Ranch Dressing mix

½ onion

Combine  above ingredients, and cook until meat is browned and crumbly.  Drain off any fat and add one cup water to this mixture.  Place in a saucepan or crock pot and add:

1  15 oz. can pinto beans (drained)

1  15 oz. can of black beans (drained)

1  11 oz. can of whole kernel corn (drained)

1 can original Rotel Tomatoes (I use the “milder” flavor.)

Bring to boil and cook 20-30 minutes.

Service size = 1 cup

Points per serving = 2 points

Notes:

You can add more water if you prefer a thinner soup.

Chicken can be substituted for the ground meat.

Adjust the “spiciness” by adding more or less taco seasoning and/or using diced tomatoes instead of Rotel.

This soup freezes well.

This is also a great recipe for the crock pot.  Just set on high for 8 hours.  If the crock pot is a large one, the recipe can be doubled.
