Clean Almond Butter Chocolate Chip Cookies

Peanut Butter is my favorite food (natural peanut butter of course!).  Only recently have I discovered Almond Butter, and I just can’t get enough of it! So when I saw this recipe in the Best of Clean Eating book, I said “Ummmm, yes please”! They were delicious!!

While they are a clean alternative to regular cookies, remember that they are a treat.  Treats are to be consumed in extreme moderation! A good way to ensure that you don’t over-indulge is to pull a couple out for yourself, and take the rest to work or to share with family or friends.  They are just too tempting to keep around the house that’s for sure! 🙂

Ingredients:

1 cup unsalted almond butter, stirred well

3/4 cup Sucanat

1 Large egg

1/2 tsp baking soda

1/4 tsp sea salt

3 oz dark chocolate (70% cocoa or greater), broken into small pieces

Instructions:

1. Preheat oven to 350 degrees.  In a medium bowl, stir together first five ingredients until blended.  Stir in chocolate.

2. Drop dough by rounded tablespoonfuls onto parchment-lined baking sheets. Bake for 10-12 minutes until lightly browned.  Let cool on baking sheets for 5 minutes. Remove to a wire rack and let cool for 15 more minutes.
